There are two differences between fairytales and cowboy stories. First, the fariytale starts out "Once upon a time" where a cowboy story may start out with "Ya ain't giong to believe this, BUT..." The other difference is that while a cowboy story may sound as far fetched as a fairytale, chances are it is actually a true story. Rather than go to bragging on how funny my stories are, I'll let you judge for yourself with these sample stories.
